Angie’s Beef Stew

POINTS value | 2 for 1 cup; 3.5 for 2 cups
Yield | 24 cups

Ingredients

**all cans are 14-15 oz.**

2 cups chopped carrots
2 cups chopped onions
2 cans canned diced tomatoes
1 Tbsp all-purpose flour
2 Tbsp A1 Worcestershire Sauce
1 tsp dried thyme
1/2 tsp table salt
1/2 tsp black pepper
2 tsp garlic powder
1/2 cup red wine
10 cups water
4 beef bouillon cubes
1 pound beef stew meat, cut into 1/3″ pieces
1 can yellow corn
3 Tbsp uncooked tapioca
1 can tomato sauce
1 can green beans
1/2 Tbsp ground oregano
1 can sliced white potatoes

Sautee beef in non-stick cooking spray until cooked through. Stir in
flour, salt and pepper.

Add all other ingredients and simmer until the carrots are soft.

Shepherd’s Pie with Garlic Herb Potatoes

I thought I’d share my core recipe for Shepherd’s Pie with Garlic Herb Potatoes.
If you are counting points it serves 8 with 5 points per serving.

Ingredients:
1 pound ground beef
4 large potato(es)
15 oz canned mixed vegetables
15 oz Del Monte Diced Tomatoes With Green Pepper And Onion
1/3 cup fat-free evaporated milk
4 oz fat-free hard or semi-soft cheese
1 Tbsp olive oil
1 Tsp Italian Herbs
2 garlic cloves (crushed)

Instructions:
Peel and boil potatoes. In the meantime in a skillet deep enough to assemble the Shepard’s pie in, cook the ground beef; add salt (to taste) the mixed vegetables (drained) and the diced tomatoes (drained). Cook until all ingredients are thoroughly cooked through and hot. Remove from heat and top with a lid to keep warm.

In the meanwhile saute garlic (crushed) and the herbs in the olive oil; mash the potatoes and add the garlic and herb mixture along with just enough evaporated milk to achieve thick mashed potatoes; salt and pepper to taste.

Leaving the ground beef mixture in the skillet, top with the mashed potatoes and spread them evenly over the ground beef mixture. Top the mashed potatoes with the cheese (grated) and cover with a lid until the cheese melts.

Taco Soup

Makes (12) 1 cup servings

Ingredients:

1 lb. ground turkey (or lean ground beef )
1 large onion, chopped
1 pkg. Hidden Valley ranch dressing mix
1 pkg. Taco Seasoning mix
1 can Pinto Beans
1 can Chile Hot Beans
1 can whole kernel corn
1 can stewed tomatoes (Mexican flavor)
1 can stewed tomatoes (any flavor)

Brown meat and onions, drain. Mix Hidden Valley Ranch dressing mix and
taco seasoning mix into meat. Then, without draining, add all of the other
ingredients. Simmer 1 hour.

SERVING SIZE: 1 cup soup
